what is the best way to start a culinary career at age 31; what do i need to look for in a school?

I am currently in the mist of a career change and was looking at the long road to becoming a chef. I want to know are some school worth all that money just to become a prep at a resturant or am i better off applying to be an apprentice at a fine resturant and diligently work my way up?
